Our availability of oyster varieties change daily. The following oyster list are some but not all of the varieties we carry. 


Buckley Bay (BC)

Grown on the beaches of Baynes Sound.

The oyster is very salty, sweet with

cucumber finish


Hammersley Inslet (WA)

Grown in the southern Puget Sound.

The oyster is mildly salty and sweet

with a cucumber finish


Kumamoto (OR)

Grown in Tillamook Bay. The oyster is

slightly creamy, mildly salty, sweet and

slightly fruity with a light mineral finish


Olympia (WA)

Grown in the southern Puget Sound.

This is the native oyster of the west coast.

The oyster is slightly creamy, mildly salty,

and sweet wtih a slight mineral finish


Sinku (BC)

Grown in Jervis Inlet. The oyster is salty

and sweet with a mild melon finish


Yaquina Bay (OR)

Grown about 7 miles southeast of Newport

up the Yaquina Estuary. The oyster is slightly

creamy, mildly salty and sweet with a cucumber

finish


Fanny Bay (BC)

Grown on the beaches of Baynes Sound

near the town of Fanny Bay. The oyster

is very salty, sweet with a cucumber finish


Hood Canal (WA)

Grown on the beaches of hood canal,

bordering the east side of the Olympic

Penninsula


Netarts Bay (OR)

Grown in Netarts Bay. The oyster is

very salty, sweet with a cucumber finish


Pearl Bay (BC)

Grown in Jervis Inlet. The oyster is salty

and sweet with a mild melon finish


Quilcene Bay (WA)

Grown in Quilcene Bay, near the northern

end of Hood Canal. The oyster is slightly

salty and sweet with a cucumber finish


Totten Inlet (WA)

Grown in Totten Inlet in southren Puget

Sound. The oyster is salty and sweet with

a slightly fruity finish
